Our Coffee Journey

Our farmer, Edward, explains the difference between Batian and Ruiru 11 varieties, both offered at Lion Hills Coffee USA.
Fun Fact: Batian plants tend to be taller than Ruiru 11 due to a faster growth rate.
After a couple of months, we can see our first bloom! This is a sign we are getting ready for production soon.
Fun Fact: These flowers only bloom for approximately three days before falling, leaving behind he pinwheel where our cherry will grow.


Once ripe, we handpick the bright red cherries to ensure quality.
Fun Fact: Our 80 acre farm hires about 150 – 200 expert coffee bean selectors, each responsible for collecting approximately 50 kilograms of cherries per day!
After selecting the best cherries, we start the washing process. We ensure the fermentation process lasts up to three days.
Fun Fact: Our farm uses about 50K Liters of water during this process.


We allow sun drying for 10 – 14 days after fermentation is complete. Our goal is to reach optimum dryness levels.
Fun Fact: We dry to approximately 11% moisture content.
Dried coffee beans are sent to the mill to be hulled and sorted.
Fun Fact: This step of the process is currently limited to mills run by the Kenyan Government to ensure to promote competition, ensure quality, and protect farmers from potential exploitation.
